APPLE PUDDING CAKE
This is one of my mom's favorites.  Its a very dense cake thats full of flavor.  I remember her making it often.  I also could tell this is one of her favorites because of the way the page looks in her cookbook.  Spills and crumbs are all over this much loved page.  Since the fall season is upon us local apples are in the orchards ready to pick.   The recipe calls for a can of pie sliced apples but I'm sure she used fresh apples in the cake.  I can remember the crunch of the apples in the cake.  The frosting is light and not real sweet so you don't overpower the taste of the cake.  Do you remember the product Dream whip....its still in the grocery stores today but when it first came out my mom made sure we had plenty on hand.  If you can't find Dream Whip you can use Cool whip and pudding to get the same results.  You could frost this cake with your favorite cream cheese frosting to.
APPLE PUDDING CAKE
2 cups flour
2 teaspoons salt
2 teaspoons cinnamon
2 teaspoons baking powder

1 can pie sliced apples or 2 cups thinly sliced apples
2 cups sugar
1/2 cup oil
1/2 cup chopped nuts
1/2 cup raisins

2 eggs1 tsp vanilla

Mix top four ingrediants in a separate bowl.  Mix bottom ingredients then add the top four ingredients. 
Spread into a 9 X 13 inch pan and bake at 325 degrees for 1 hour.

FROSTING

1 pkg instant vanilla pudding
1 pkg Dream whip
1 1/2 cups cold milk

Beat 5 minutes until it is the consistancy of whipped cream
