Hester's Buttermilk Pie
This recipe comes from my Mom's little red and white cookbook.  I couldn't tell you who Hester is but I can guess it is from my Dad's side of the family.  In all my life I have never heard such funny names as the ones that are related to my Dad's side of the family.  My Dad being born and raised in the south makes him a real southern boy at heart.  He has lived most of his adult life here in Michigan but his roots always bring him home.  I remember as a kid hearing some of the names his relatives had just gave me a chuckle.  Here is a sampling of some of the funny names, Ronell, and of course his wife Ruby, or how about Lurton or Della Jane.  This is just the ones I can remember and I know this is just the tip of the iceberg. 

This pie is very rich and sweet and eating one slice could put you into a sugar high for a week but it is delicious.  In my mom's cookbook she has two buttermilk pie recipes that I will be printing.  They are totally two different recipes the only thing the same is the content of buttermilk and the name.
1/3 cup butter
1 1/3 cups sugar
3 eggs
2/3 cups buttermilk
2 teaspoons vanilla

Line one 8 inch pie pan with a flaky pastry

Work butter until it is soft and creamy.  Gradually work in the sugar until the mixture is as smooth as possible.

Beat in eggs one at a time beating hard after each addition.

Slowly mix in buttermilk and vanilla.

Pour the mixture into the pie shell and bake for 30 minutes  at 350 degree's or until the filling is quite firm and lightely browned
