This is not a family favorite per say, but it is one of my familys most requested flavors of cake. My dad had a carrot cake for his 80th birthday also just last week my sister Anita turned 50 and she had carrot cake at her birthday. I think if I remember correctly the first birthday cake I baked for my new family was a carrot cake....now the kids come up with all sorts of ideas for their cake. Chocolate peanut butter. Cherry, lemon cake, I never know what they might request. For my step daughters birthday in september I attempted to make a four layer cake. It did come out fine so who knows one of the kids might request a 5 layer cake next. I'm not afraid to attempt it because I know however it turns out they will eat it.....I have a family that really likes there sweets.

4 Eggs
2 1/2Cups Flour
2 Cups Sugar
4 tsp. Baking Powder
1 Cup Oil
1 tsp. Salt
3 Cups grated carrot
1 tsp. cinnamon
4 Tbls. Orange Juice
1 tsp. nutmeg
1 Cup Walnuts
1 Cups Raisins
In a large mixing bowl beat together eggs, sugar until light and creamy. Stir in oil until well combined. Add your carrots, juice, walnuts. Combine dry ingredients with egg mixture. Place batter into two 9 inch cake pans.
Bake 350 degrees for 25 to 30 minutes.
Cream Cheese Frosting
8 oz's unsalted butter (softened)
8 oz's softened cream cheese
4 cups powdered sugar
2 tsp. pure vanilla extract
Mix with electric beater until smooth consistancy. If more sugar is needed add or if to thick add a teaspoon of milk at a time to desired consistancy.
