Cheesy Spaghetti Bake
This is another recipe from my sister Laurel.  She resides in North Carolina with her husband and three children and 8 beautiful grandchildren.  My sister is a wonderful cook and baker and has given me quite a few recipes.  This particular one I remember having after my nephew Ryan made it for me.  He was like 10 or 12 years old.  He now is married and has three rambunctious children of his own.  If memory serves me right what goes around comes around and in Ryan's case he was a very rambunctious child himself.  I remember a story my sister told me once about him.  She said she had walked into the kitchen and found Ryan up on top of the refridgerator stuffing his mouth with cookies.  She yelled " Ryan" what are you doing up there?  His reply was Mom if you didn't put the cookies up here I wouldn't have to climb up here!
1/2   Lb. Ground Beef
1/4   Cup Chopped Onion
32    oz. spagetti sauce
6-7   oz. cooked rinsed and drained Spaghetti Noodles

Cheese Sauce
2   Tablespoons butter
1   Tablespoon Flour
1/4 tsp. salt
3/4 Cup evaporated milk

Melt butter in sauce pan.  Stir in flour and aslt, add milk.  Cook over medium heat until slightly thickened.  Stir constantly, Add 1/2 cup shredded cheddar cheese.  Stir until melted.  Spread 1/2 spaghetti mixture in bottom of 10 X 6 X2 inch baking dish.  Top with cheese sauce.  Add remaining spaghetti mixture and top with 1/2 cup of shredded cheese.  Bake at 350 degrees for 15 to 20 minutes.
