Chocolate Zucchini Bread
Here is another recipe for that overgrown zucchini! As I stated in my previous recipes cooking and overly large zucchini for your vegetable will result in a tasteless side dish. But don't throw it away use it to bake up something delicious and the kids will never know they are getting their vegetables too.
3 Eggs
2 Cups Sugar
1 Cup Vegetable Oil
2 2 oz. squares unsweetened baking
chocolate
2 Cups grated zucchini
1 tsp. vanilla
3 Cups flour
1 tsp. salt
1 tsp. cinnamon
1/4 tsp. baking powder
1 tsp. baking soda
1 cup walnuts
Preheat oven to 350. Grease and flour two bread pans.
In a large mixing bowl beat eggs until light and fluffy. Add sugar and oil. Melt the chocolate either in a double boiler or microwave. Once melted add the grated zucchini and vanilla to the melted chocolate. Add cooled chocolate to egg mixture. Sift together your dry ingredients. Flour,salt,cinnamon,baking powder and baking soda. Add dry ingredients to the egg and zucchini mixture. Add the walnuts last. Divide the batter evenly into two loaf pans and bake for 1 hour and 20 minutes. Or until a toothpick inserted comes out clean. Remove to wire racks and let stand for 10 minutes. Invert onto cooling rack.
