Peanut Butter Cookies
These cookies use to be in my usual Christmas cookie list as they were the easiest cookie to make. They are like Reese's Peanut Butter cups. Use a good creamy peanut butter and don't make it too stiff, then it will then be crumbly. My daughter and I don't make these any more as we make the traditional peanut butter cup candy. My daughter is interested in the candy making process. She is in her senior year at high school and is going to attend pastry school. She wants to make sugar sculptures and learn to blow candy so she can also use her artistic interests too.
Try this easy recipe, I guarantee you won't have any leftovers.
2 Cups creamy Peanut butter
1/2 Cup Butter or margarine
3/4 Cup Brown Sugar
1 Lb. Confectioners sugar (41/2 Cups)
Mix troughly and press into a buttered 9 X 13 inch pan. Chill
Melt a 12 oz bag of semi sweet chocolate chips with 2 Tbls. Butter.
Pour over the top, spreading evenly. Chill again then cut into bite size squares.
