Pecan Sandies
This cookie has a terrific pecan flavor and its very easy to make.  To bring out the flavor of the pecans spread them evenly out on a cookie sheet and roast in the oven for about 10 minutes at 350 degrees.  Once you can smell them you know they are done.  This tecnique can be and should be used anytime you are using nuts from the grocery package.  It only takes a few minutes to bring out the rich flavor of any nut you are using.

I made these for the first time this holiday.  My husband takes the week between Christmas and New Years off for vacation and this year we had plenty of time before the holiday that he pitched in for some of the holiday baking.  We picked this recipe out of one of my cookbooks and then adpated to our tastes.

For another baking tip I always use butter and not margarine in all my cookies.   The flavor of butter always enhances the taste, and  I don't think it makes a big difference if you use unsalted butter or salted.

1 cup butter ( softened)
1 cup cream cheese (softened)
1 cup sugar
2 cups all purpose flour
4 teaspoons baking powder
1 cup ground pecans
1/8 tsp. salt

In mixing bowl combine butter and cream cheese.  Add sugar and mix well.  In a separate bowl mix your dry ingredients, flour, baking powder and salt. 
Slowly incorporate the flour into the butter, cream cheese mixture adding a 1/2 half cup of ground pecans.

Wrap in plastic wrap and chill for 1 1/2 to 2 hours.

Preheat oven to 350 degrees

Shape into 1 inch balls and dip into ground pecans.  Place on a greased cookie sheet and bake for 12 minutes.

Gently transfer to a wire cooling rack.

(Note) I only dipped the top of the ball in the ground nuts or you may run out of ground pecans.
