No Peek Chicken
Here is another quick and easy recipe to keep on hand. I don't remember having it as a child but I do remember my mom giving it to me when I was working full time and looking for a quick meal to fix my family. This makes life so easy if you are like alot of us that purchase those big bags of chicken breasts. This one you can fix even when the chicken is frozen.

CHICKEN IN RED SAUCE
I just made this dish the other night but did a change in it. I had some pork chops in the freezer and thought "why not". I browned the chops in a pan first before adding them to the baking dish. I jullianed some carrots, onion and green pepper, then drained a can of chunk pineapple.

This again was a recipe my mom made when I was a child. It is one of the many I will be adding to my web site from the metal box that was her's. this dish is not the prettest when you serve it but the flavors are great. I think that brushing the chicken with lemon juice and butter really adds to the flavor of the dish. Again this is one of those easy one dish meals that you can throw together quickly.

I made this last night for dinner and it was delicious. My husband thought so to. I served it with Portebello Risotto and a green salad with garlic bread. I didn't take a picture of it because I do not have the skill of a chef in rolling the chicken breasts up. I did pound them thin but I find that they tend to fall apart and I don't know why. If anyone has any suggestions or techniques on keeping the breast in tact when pounding them PLEASE let me know.

These would make a great appetizer but I made them for dinner a few weeks ago. Chicken wings are very economical and they fit into my grocery budget quite nicely. This is a recipe I found in my Mom's recipe card file. I think almost everyone likes traditional Buffalo Wings but this puts a new flavor twist on these tasty little bites.
