I can't remember when I received this recipe from my mom but I'm sure it was long ago. It could have been when one of the neighbors grew a very large zucchini and I knew it wouldn't taste very good cooked as a vegetable. When zucchinis get large they lose a lot .......

This is a light variation of the stand by traditional pumpkin pie. You get all the pumpkin taste but this pie is very light and airy. This is one of my mom's favorites. Its a very dense cake thats full of flavor. I remember her making it often. I also could tell this is one of her favorites because of the way the page looks in her cookbook. Spills and crumbs are all over this much loved page. Since the fall season is upon us local apples are in the orchards ready to pick.

Nutty Pumpkin Muffins
I made a fresh batch of these yesterday. This first batch I didn't fill the muffin cups full enough they turned out little so the second batch I made sure I filled it atleast 2/3rds full. I reserved some of my chopped pecans and mixed it with brown sugar and cinnamon to sprinkle on the top before I baked them.

When I read this recipe I was kind of turned off by the ingredients and I had said to my husband that I was not going to make all the recipes in my moms collection because some of them just sounded unappetizing. He said you can't do that you have to make them all to see what they are like some of them may surprise you.

I used this recipe to make a cream of broccoli soup a few weeks ago. This recipe is just a stepping stone to any type cream base soup you might want to make. Whatever is on sale that week at your grocery store in the vegetable section would work nicely. Cauliflower, asparagus, Butternut Squash, Acorn Squash, Mushroom, Tomato.
My attempt on this delicious coffee cake was a flop. As you can see in the picture. I didn't read the recipe right and apparently did not bake it long enough. It says for one hour and 10 minutes. Oops I forgot the last 10 minutes. I did test it with a toothpick and it came out clean, so that is not and accurate test to this cake.
