Fettuccine, snowpeas, ham & tomatoes
This is not one of my Mom's low calorie recipe's. The 2 cups of whipping cream clued me in on that. I don't remember Mom making this when we were kids the card is dated June 1985 so it was long after I was married for the first time, she made this recipe. There is no hint as to where she may have gotten this recipe it could have been from the newspaper or a magazine. Or she could have even had it at a friends house...but she usually put who she got it from on the card or in her book.
I made this for my family about 2 weeks ago and they loved it. I couldn't find the white and green fettuccini so I just used white. As you can see by the picture it makes quite a bit. My Mom was a wonderful cook and a great baker. She was always trying new things. My sister's and I think anything that got copied down on one of her recipe cards or in her book had to be a keeper. Meaning she must have like it or she wouldn't have bothered writing it down. Try this on out and let me know how you like it or tell me how you changed it for your families taste.
Fettuccine, snowpeas, ham & tomatoes
1 T. Butter
2 Shallots (chopped)
1 Clove Garlic (minced)
1 Cup Dry white wine
2 Cups whipping cream
1 teaspoon dried Tarragon
1 1/2 Cups Snowpea's (cut in half)
1 Cup slivered Ham
1 Large Tomatoe (peeled)
1/2 Cup fresh Parmesan Cheese (grated)
1 Lb Fettuccini (green & white) cooked
Salt and Pepper to taste
Melt butter in a large skillet. Add shallots and garlic, saute until tender. Add the wine and simmer until reduced to about 2 tablespoons. Add the cream and tarragon and simmer until reduced to about 1 1/2 cups. Stir in the snowpea's ham and tomatoes. Cook until heated through. Mix 1/2 cup parmesan, salt and pepper. Pour sauce over the cooked fettuccine. Sprinkle with more parmasen cheese. Garnish with fresh tarragon and green onion.
