This has got to be one of the easiest cookie bars to make. You will most likely have all the ingredients in your pantry or handy in your cupboards. This comes from one of my Moms treasured recipe cards. If you are a fan of the Heath Candy bar you will delight in the flavor of this unusual cookie. My step sons Cody and Dylan do a happy dance when I make these. But I think its my husband Don is the one that requested these last weekend. To his dismay I didn't have the needed soda crackers for the cookie so I promised him a batch on Monday. After I make them I have to hide them from the kids or they would sit their and eat the whole batch. When making these delightful treats please remember to boil your sugar and butter long enough. The full three minutes or they won't harden like the should. I'm pretty sure you could use a candy thermometer to make sure it is at the hard ball stage. I have never used a thermometer I just set my stove timer for 3 minutes and pour it over the soda crackers.
1 Cup Butter
1 Cup Brown Sugar ( light or Dark)
1 12 oz package chocolate chips
Using a sided cookie sheet cover it with aluminum foil. Spray with none stick cooking spray. Line the cookie sheet with soda crackers, filling the whole bottom.
In a small sauce pan melt the 2 sticks of butter and add the brown sugar. Bring to a boil and boil for 3 minutes.
Pour the mixture evenly over the crackers. Bake for 8 minutes at 400 degrees.
Remove from the oven and immediatley pour a 12 oz bag of chocolate chips. Let them soften and then spread evenly.
Score the top while the chocolate is still soft. Cut or break into serving pieces.
