Peach Cobbler
I made this Saturday for the family.  I had bought peaches two weeks ago to make a peach pie or cobbler I hadn't decided, but the peaches kept disapearing!  The kids kept eating them so I was down to only four and I know I needed at least six or eight for the size recipe I need to feed all of us.  So Saturday morning me and Don took a ride to Potato Joe's.  Its a little road side stand run by I assume "Joe".  I really am not sure what his name is but a friendly toothless man who carries the best fresh local produce.  I orginally found this recipe on the internet at sourthern foods but put my own spin on it.  Its so easy and delicious.  I think the hardest thing about this recipe is peeling the peaches.  I heard you can process them like a tomato to remove the skins but since I only needed eight I peeled them by hand.  (drop in boiling water and wait for skin to crack then put immediatly in ice water, makes for easy peeling.) Since we didn't eat the cobbler until evening I rewarmed each serving in the microwave. 
Peach Cobbler
1 Stick Butter
2 cups Sugar plus  4 Tablespoons for peaches
2 cups Flour
4 teaspoons baking powder
1/2 teaspoon salt
2 cups milk
1/ 1/2 teaspoons Almond extract
8 Peaches peeled and sliced thin
1 teaspoon cinnamon

Unwrap the stick of butter and put into a 9 X 13 inch pan.  Place pan in oven while the oven is preheating and let the butter melt.  Meanwhile combine 2 cups of sugar with the
flour, baking powder and salt.  Spinkle sliced peaches with the 4 tablespoons of sugar and cinnamon.   Mix the milk into the dry ingredients making a smooth and thin batter.  Pour batter into pan with the melted butter.  Spoon the peach mixture over the batter and bake for approximately 50 minutes or until browned and not loose in the middle.

Serve warm.
