No Peek Chicken
Here is another quick and easy recipe to keep on hand. I don't remember having it as a child but I do remember my mom giving it to me when I was working full time and looking for a quick meal to fix my family. This makes life so easy if you are like alot of us that purchase those big bags of chicken breasts. This one you can fix even when the chicken is frozen.

Sausage and Rice Casserole
This recipe is great for a quick night meal or for a crowd. My Mom use to make this and then put it into a crock pot . As usual she would double or triple the ingredients to feed us all. The story behind this recipe is all my sisters kept asking if any of us had the recipe for Mom's sausage and rice and we all told each other NO! Since my mom has passed we just assumed it went with her to heaven and she never wrote it down.

CHICKEN IN RED SAUCE
I just made this dish the other night but did a change in it. I had some pork chops in the freezer and thought "why not". I browned the chops in a pan first before adding them to the baking dish. I jullianed some carrots, onion and green pepper, then drained a can of chunk pineapple.

This again was a recipe my mom made when I was a child. It is one of the many I will be adding to my web site from the metal box that was her's. this dish is not the prettest when you serve it but the flavors are great. I think that brushing the chicken with lemon juice and butter really adds to the flavor of the dish. Again this is one of those easy one dish meals that you can throw together quickly.
hamburger strognaoff
I learned how to make hamburger stroganoff when I was pretty young. I remember my mom standing behind me in the kitchen to watch that I was doing it right. I still recall her explaining to me about when you added the sour cream to the recipe. She would say "you don't want the sour cream to break? "
To this day I still remember how she carefully showed me to add a little of the liquid from the pan into the bowl of sourcream.
Lasagna Toss
This page I am dedicating to my sister Laurel. She is the oldest of us sisters and as we lovinly call her the BOSS. Laurel and I are the clossest in personality and our dislikes and likes are very similiar. Although she has not lived here in Michigan for a very long time we remain close friends. Being the oldest of 5 siblings she naturally got the title BOSS. When we were younger she was the one to take care of us...look after us and protect us.
