I think I will remember the story behind this recipe until I die. This is not the exact recipe my sister Reta used but very similar. My sister Reta was blessed with patience and the gift to love all children. BUT she was not blessed in cooking skills. To date the biggest chore in her home is cooking dinner. She has always disliked it and still after 25 years of marriage she still cringes at the thought of putting a meal on the table for her family. Well Reta being newly married and trying to be a good housewife decided to make her husband Mike rice pudding. She had gotten through all the recipe and stopped abrubtly just starring at it for a minute. "Raisins" I'm sure she said..."Holy Shit! I don't have any raisins." But being the creative person she is, she improvised! I have Raisin Bran cereal. So low and behold...you guessed it, Reta picked a whole cup full of raisins out of that box of Raisin Bran. Voila Rice Pudding
Reta style.
3 Cups White Rice Long Grain Cooked
3 Cups Whole milk
2/3 Cup Sugar
2 Tbls Butter
1/2 Cup raisins
1 tsp vanilla
1 tsp cinnamon
zest of 1 lemon
Combine cooked rice, milk, sugar and butter in a sauce pan. Add raisins and vanilla. Cook over medium heat for approximatly 25 minutes stirring constantly until most of the liquid is absorbed.
Mix in lemon zest and cinnamon, spoon into serving dishes sprinkle with cinamon and serve. You can also serve cool.
