Rumacki
(without the chicken livers)
This is my sister Reta's recipe. If Reta doesn't bring this at Christmas time I think we all would cry. As I told you on a previous recipe Reta is not a willing participant in the kitchen but what she does make is usually very good. This recipe is a Holiday favorite for our family, and its a given they will all be gone before the evening comes to and end. Its a very simple recipe with only 5 ingredients. The hardest thing about this is finding the whole water chestnuts. A word of warning do not use and inexpensive bacon the flavor is just not strong enough. I know this is not the true rumacki, but I told my sisters thats what it was called not knowing there are chicken livers in the original......So this is the Reta version of Rumacki.
Rumacki
4 Cans Whole Reese's Water Chestnuts
2 Lbs Bacon (good Quality)
Sauce
1 Cup mayonnaise
1 12oz bottle Chili Sauce
2 Cups brown sugar
Drain the chestnuts, Cut the bacon strips in half and wrap around the chestnut. Secure with a toothpick and bake at 400 degrees until the bacon is crisp. Combine mayo, chili sauce and brown sugar in a sauce pan. Cook until sugar is dissolved. Arrange chestnuts into a roaster pan or crock pot and cover with sauce. Keep warm until they have all been eaten.
