Linguini Salad
Linguini Salad
This is a good summer salad that we use to make often.  I think our family got tired of it as it was a staple at any family gathering.  This pasta salad becomes more flavorful the longer it sits.  Sometimes you have to add more italian dressing the second or third day.  The ingredients are not set and can be altered to your liking.  If my family had their way it would have olives and cheese in it.  I myself have added parmesan cheese to this....so you could add any type cheese you have on hand.  This salad is very versital and you can adapt it using different noodles.  I have used rotini, or mosticolli be creative for my daughter and step-son's graduation party I used tri color rotini.  Let me know some of your versions and I can add them to my web site.
1 lb Linguini  (cooked)
4 Medium Tomatoes (diced)
1 Cucumber or small zuccini (diced)
1 Medium onion (diced)
1 Green Pepper (diced)
1 8oz bottle zesty Italian dressing
1/4 to 1/2 bottle Salad seasonings (durkee or spice island)

Mix all ingredients and Chill
