Sausage and Rice
This recipe is great for a quick night meal or for a crowd. My Mom use to make this and then put it into a crock pot . As usual she would double or triple the ingredients to feed us all. The story behind this recipe is all my sisters kept asking if any of us had the recipe for Mom's sausage and rice and we all told each other NO! Since my mom has passed we just assumed it went with her to heaven and she never wrote it down. Well low and behold about two years ago I was going through some of my recipes and guess what? Yep, I found it. I think I relayed it to my sister Laurel but just last night seeing my sister Reta I told her I was putting it on my web sight. Her eyes got really big and she loudly said YOU HAVE THAT RECIPE! Oops.....sorry I didn't know I had it. Please forgive me family but here it is now for whom ever wants it..
1 Lb pork sausage (brown)
1 Cup Chopped Celery
1 Green Pepper Chopped
1 Cup of Rice (long grain)
2 Cups Water
1 Pkg. Onion soup mix
Chop all vegetables fine. Everything can be added into a Dutch oven or large pot. Bring to boil and then turn down to simmer until all water is absorbed. Stir about every 10 minutes.
